The Tomahawk is a cut of meat that comes from the rib of the cow, with a large amount of intramuscular fat that gives it exceptional flavor and juiciness. Its presentation is impressive due to the long bone that is left intact, making it ideal for special occasions and for sharing.
Ingredients
To prepare a Tomahawk steak for 2-3 people, you will need:
– 1 Tomahawk steak (approximately 1.2-1.5 kg)
– Coarse salt
– Freshly ground black pepper
– Extra virgin olive oil
– 2-3 sprigs of rosemary (optional)
– 2-3 cloves of garlic (optional)
– Butter (optional)
Preparation
1. Prepare the meat: Take the Tomahawk steak out of the refrigerator at least one hour before cooking to allow it to reach room temperature. Pat it dry with kitchen paper and season generously with salt and pepper on both sides.
2. Preheat the grill or oven: If you’re using a grill, preheat it to high heat. If you prefer the oven, preheat it to 250°F (120°C).
3. Sear the meat: Heat a large skillet over high heat and add a little olive oil. Sear the Tomahawk steak on all sides until nicely browned, about 2-3 minutes per side.
4. Grill or bake:
Grill: Place the steak on the grill and cook over indirect heat (not directly over the flames) until it reaches the desired doneness. Use a meat thermometer to check the internal temperature (50-52°C for medium rare).
Oven: Place the steak on a baking sheet and cook until it reaches the desired internal temperature. You can then sear it again in a hot skillet with butter, garlic, and rosemary for added flavor.
5. Rest: Once cooked, let the Tomahawk steak rest covered with foil for about 10-15 minutes to allow the juices to redistribute.
6. Serve: Cut the steak into thick slices and serve with your favorite accompaniments.
